Milktart

This recipe my mom got from a friend. After making this recipe, I've never made any other to match it.

This is ideal for a last minute visitor. It takes only minutes to make without the need of special ingredients and it can be served immediately.

in a Med-Large pot:
1L Milk
125g Margarine/butter

Separately in a mixing bowl:
2 eggs
250ml sugar (I prefer white)
Pinch salt
45ml flour
45ml corn starch (Optional: use 30ml corn starch and 15ml custard powder)

Other ingredients:
Tennis biscuits
Vanilla essence
cinnamon

Bring Milk and Margarine/butter to boil.
Whisk in mixture from bowl
Wait mix on low heat till thick.
Add Vanilla essence.
Pour over tennis biscuits
Sprinkle with cinnamon.


This is NOT a good recipe to double.



5 minute cheesecake

For someone like me who enjoys entertaining people and makes generally last minute decisions, fast and delicious recipes are a must. There are quite a few favorites. Being my first post, I have to share a fridge cheese cake recipe that not only takes 5 minutes to prepare, but is really good!!! Thanks to Viv for this amazing recipe one late afternoon in December.

Needed;
1 Tin Condensed Milk
1/4 cup fresh lemon juice
1 tub cream cheese
Tennis biscuits

Mix the condensed milk, lemon juice and cream cheese together till smooth. Poor over tennis biscuits. Allow to set in the fridge - for best results, overnight, but a couple of hours of chilling should work too.

Optional: Gently poor a layer of strawberry jelly over the top and allow to set. Cover with fresh/tinned strawberries. (or any other fruit flavor you prefer.)

Done!

This recipe can be doubled with ease!
